Winter warmer recipe

A tasty nibble for Christmas

Thanks to all of you who attended the food workshops run by nutritional therapist Catherine Jeans and Alex Hobbs. Did you hear Catherine on BBC Radio Norfolk with her hints on warming seasonal food? Here’s a super quick recipe for a Crustless Quiche Muffin – great for using up leftover turkey instead of ham and ideal to prepare in advance for the buffet table.

Crustless Quiche Muffins
Makes about 16

You will need:
  • Olive oil for greasing
  • 8 thin slices of lean ham, chicken or turkey
  • 8 eggs
  • 3 tablespoons of Quark
  • Leftover cooked vegetables - chopped
  • Freshly ground pepper
  • Small bunch of chives, chopped
  • Half teaspoon turmeric (optional)

  1. Preheat oven to 180 C.
  2. Dip some kitchen roll into the olive oil, and wipe inside the muffin trays.  
  3. Line each muffin tray with the slices of ham
  4. Drop the chopped cooked vegetables into the bottom.  
  5. Beat eggs with the quark. Add the freshly ground pepper and chives. 
  6. Pour the egg mixture into the muffin trays. 
  7. Bake for about 15 minutes, until the muffins have risen and the tops are golden. 
  8. Allow to cool for a few minutes before turning out.  

Store in a sealed container in the fridge for up to 3 days.  
Lovely served with salad for a main meal, or ideal as a snack.  
Can be reheated.
