Winter Warmers... Broccoli Pesto

Pesto is a great pasta sauce to make as it contains unsaturated fats, which help improve cholesterol, and also decreases risk of inflammation, which is associated with cancer and other diseases. The key ingredients also help protect your heart, and help protect you from chronic diseases. Adding broccoli improves the health benefits, especially if you use super broccoli, Beneforté. Super broccoli is packed with glucoraphanin, which causes our bodies to produce sulphoraphane when broken down. Sulphoraphane provides crucial antioxidant support which helps support a healthy metabolism.
Broccoli Pesto:
4 cups of Beneforté broccoli florets
½ a cup of walnuts
4 garlic cloves
Juice and zest of 2 lemons
1 cup of extra virgin olive oil
1 cup of shredded parmesan
Sea salt and fresh ground pepper to taste

1. Heat a dry frying pan over a medium heat. Add the walnuts and toast them for a few minutes until browned and fragrant.
2. Place the parmesan in a food processor and add the basil leaves, garlic, toasted walnuts, lemon zest and olive oil. Season to taste with some lemon juice, salt and freshly ground black pepper.
3. Blend for a few seconds until it begins to come together and is smooth
